Crafted with VG10 stainless steel, the blade achieves a Rockwell hardness of HRC 62, providing exceptional edge retention and corrosion resistance. The DP clad construction sandwiches the VG10 core between 13-chrome stainless steel layers, ensuring lasting sharpness and resilience. Each knife is hand-sharpened at a 15° angle by skilled Tojiro artisans to achieve a razor-smooth edge that glides through ingredients without tearing.

Its integrated one-piece design seamlessly connects the blade and handle, preventing loosening or cracking over time. The 18-8 stainless steel handle, ergonomically contoured with subtle ridges, offers a secure and comfortable grip, ensuring control and balance even in prolonged use.
