Handcrafted in Tsubame-Sanjo, Japan — the Tojiro VG10 Boning Knife is a professional-grade tool designed for precision, strength, and control. Forged with VG10 core steel, it achieves remarkable sharpness and long-lasting edge retention, while the 13 Chrome stainless cladding enhances corrosion resistance and easy maintenance.

The 15° single-bevel edge, hand-sharpened by skilled Japanese artisans, allows for clean, precise cuts with minimal resistance. Its concave blade back ensures smoother airflow, reducing food adhesion and enabling effortless trimming, skin removal, and deboning.

Crafted with a reinforced 18-8 stainless steel handle, this knife provides a comfortable, anti-slip grip that fits naturally in the palm. The seamless, full-steel construction prevents residue buildup and maintains hygiene even in professional kitchens.

With a 3mm thick spine, it combines rigidity and durability — ideal for chefs seeking balance between power and finesse.
